Nassari anchovies are caught by traditional methods in the Cantabrian and Mediterranean Seas. The freshly caught anchovies are cleaned and then salted in barrels for at least 6 months. The anchovies are then desalted and cut into fillets before being covered with olive oil. Anchovies are rich in vitamins, minerals, and Omega 3 fatty acids. Their salty flavor makes them an excellent choice for salads or served on toast, and they pair well with a good white wine.
